Baba Ghanoush, a famous Middle Eastern appetizer

Baba Ghanoush (Baba Ghannouch or Mobtal) is a famous appetizer in the Middle East. One of the most important ingredients of this product is Tahini. Tahini contains protein and essential amino acids, minerals such as calcium, phosphorus, potassium and iron, unsaturated fatty acids, omega-6 and omega-9 fatty acids, vitamin E, vitamin B and antioxidants and is effective in reducing blood cholesterol and preventing cardiovascular diseases and cancer.

Ingredients for making Baba Ghanoush 

Medium fleshy eggplant: 2 pcs. 

Oghab frying oil containing sesame oil: 2 tablespoons 

Oghab refined sesame oil: 1/4 cup 

Garlic: 2 cloves

Paprika or red pepper: half a teaspoon

Fresh lemon juice: 2 tablespoons

Oghab’s tahini: 1/4 cup

Finely chopped parsley: 2 tablespoons 

Salt and pepper: as needed

Oghab roasted sesame seeds: as needed 

How to make Baba Ghanoush

  1. First, wash and dry the eggplant skin. Then cut them in half and place them on a baking tray. Grease the outer and white parts of the eggplant with Oghab sesame oil and sprinkle a little salt on it.
  2. Turn the eggplants over and use a fork to make a few holes in them so that they cook better and the skin can be easily removed from the eggplant flesh after cooking.
  3. Place the tray in the oven for 10 minutes at 200°C. It is best to preheat the oven for 15 minutes. 
  4. After removing the tray from the oven, turn the eggplants over, let them cool slightly, and then remove their flesh.    
  5. Put the eggplant flesh, garlic, paprika, fresh lemon juice, salt, pepper, and eagle's egg in a bowl and mix together in a mixer until smooth.
  6. Add the finely chopped parsley and stir with a spoon.
  7. Pour the Baba Ghanoush into a suitable container and add the refined sesame oil.
  8. Depending on your taste,you can decorate Baba Ghanoush with roasted sesame seeds. You can also enjoy Baba Ghanoush with pita bread or lettuce leaves. (Oghab Blog)
